Lorecipes: A Day of Feasting!

Ingredients:

  • ½ avocado
  • Salt, paprika, chili powder, and lemon juice to taste
  • 1 egg
  • Cheddar cheese

Heat oven to 350.

Score ½ avocado and sprinkle with salt, paprika, chili powder and lemon juice.

Bake the avocado for 5 minutes.

While the avocado is in the oven, prepare one egg sunny side up or hard boiled.

Optional: Sprinkle egg with cheddar cheese.

Serve the egg over the avocado with a side of whole wheat toast.

Expert Tip: This recipe is for breakfast, but you can stuff avocados with salads, pasta sauce, meat and bean chili, and more to add some easy protein into your diet and get rid of pesky leftovers. If you’re going to bake it, I recommend being sure to cover the top with some kind of cheese that goes with your meal to make sure it’s not too messy.

Combine the following ingredients in a bowl:

  • 2 cups cooked bulgur or quinoa
  • 2 large tomatoes, diced
  • ½ cup fresh parsley
  • ½ cup fresh mint
  • ¼ cup finely diced onion
  • Salt and pepper to taste

Mix separately to make the vinaigrette:

  • ½ cup Lemon Juice
  • ¼ cup olive oil
  • 1 tsp salt
  • 1 tsp pepper

Pour the vinaigrette over the salad.  This salad tastes best when allowed to chill overnight.

This meal works great as a frozen meal  – just put all the raw ingredients together in a ziplock and freeze.

Chop:

  • 2 chicken breasts
  • 1 zucchini
  • 1 onion

Sear the chicken in a frying pan with:

  • Olive oil
  • Salt and pepper
  • 1 Clove Garlic

When the chicken is mostly cooked, add the zucchini, onion and:

  • ⅓ cup lemon juice
  • 2 tsp oregano

Cook until veggies are just tender.  Add extra lemon as needed.

Top with Parmesan cheese.

Serve over bulgur, couscous or quinoa.
