My family discovered this recipe years ago when we were in Hungary over Thanksgiving and couldn’t find any turkey. I rediscovered it this spring while watching Avengers: Age of Ultron. It’s got a little bit of a kick, but the flavors mellow together into something very satisfying – just like my hopes for Infinity War.
3 Tablespoons Coconut oil or olive oil
1 Tablespoons Hungarian paprika
3 Onions, chopped
Add the following to the oil mixture and bring to a simmer (or cook on low in a crock pot for four hours):
2 lbs Chicken (whole if cooking in the crock pot or cubed and pre-cooked if cooking on the stove)
1 Cup Chicken stock (2 Cups if using a crock pot)
1 Tomato, diced
2 Anaheim peppers, chopped
1 Teaspoon Salt
½ Teaspoon Pepper
2 Cloves garlic, crushed
Just before serving, take some of the broth and whisk the following in until smooth:
½ Cup Sour Cream
2 Tablespoons Flour
Serve over egg noodles, polenta, or riced cauliflower.
